As a teenager, I did not understand why everyone enjoyed black beans so much, nor what are the benefits. As a mom, I have learned how many health benefits it has and why it is great to have as part of our diet. I have a cousin who used to eat it to help her to increase her iron level. Now, being someone who suffers from fibroid, consuming black beans helps with weakness, fatigue and weak immune system and poor concentration due to the loss of blood. One most important factor is that Iron is a primary component of our muscles cells. Iron is a major component of two proteins which are part of our muscle cells that hold oxygen: hemoglobin and myoglobin.
Note: I am by no means a doctor but this is my personal experience and research.
What I enjoyed visiting my family in Mexico is that I get to eat one of my favorite food full of proteins and energizing. It is black beans and pork. Black beans can be using to make many other meals that we enjoy. Today I will share my grandmother’s Black Bean and Pork (No fat.) Normally, we make a big pot and use for the rest of the week and enjoy our favorite recipes.
Black Beans Soup with Pork
Delicious Black Bean Soup is a healthy and energizing super food protein.
- 1 lbs black beans
- 1 large onion minced
- 2 large or 4 sml heads garlic minced
- Thyme & Oregano to taste
- Black pepper
- Pour 6 cups water into big pot, boil.
- Put beans into pot after cleaning and washing.
- I usually soak my beans overnight to make it softer.
- Saute onions, garlic until onions comes clear.
- Stir in the beans, thyme and oregano, salt and pepper. Season to taste.
- Boil for 45 minutes or until done.
- Stir well and serve.
- Add sour cream and diced tomatoes and cilantro to decorate.
Frijoles Negros con Puerco sin grasa
- 1 libra de frijoles rojos pequeños
- 2 dientes de ajo en cubos
- 1 cebolla picada
- Tomillo y orégano al gusto
- sal y pimienta
- aciete de oliva
Ponga las judías en la olla despues de limpiar y lavar.
Normalmente me empape mi frijoles durante la noche para hacerla más suave.
Sofreír la cebolla y el ajo hasta que la cebolla viene claro.
Añada los frijoles, el tomillo y el orégano, la sal y la pimienta. Sazone a su gusto.
Hervi durante 45 minutos o hasta que esté hecho.
Agita bien y servi.
Añadie la crema agria, tomates y cilantro para decorar. Buen provecho
