As we continue with the cool season and get fit season, we prepare on of our Flavorful Gluten Free Mushroom Soup, Quick and Easy high in vitamin D. Oh yes, we live in the sunshine state but do we enjoy the sunshine? Of course we see it everyday but do we actually get to spend time outside, oh no! What, we have no time for that with so much to do, right? Well, that his why it is important to know what we eat that is natural! This soup is not not only is it full of vitamins but very tasty , quick and easy. Your family will ask for more!
This is one of my Spanish in-law heritage. My hubby enjoys his mushroom in many ways: in soups, baked, fried, roasted or barbecue. It is with joy that we share one of our favorite home-made gluten free mushroom soup. Some needs to acquire the taste as they have never tried it before.
It is great to have as it also has vitamin b, gluten free, low calorie, low sodium and guess what? No cholesterol! Oh yes, you got a tasty and healthy soup to add to your menu. Let get on with it so you can share with your family as well.
Flavorful Gluten Free Mushroom Soup
1 lb mushrooms sliced (variety or depends on your choice)
3 tablespoon butter
1 small onion diced
2 garlic minced
1 tsp thyme leaves or fresh if possible
1 cup vegetable broth
1/4 cup wine
1 tablespoon flour
1/2 cup cream
Method
On medium heat, melt1 tsp butter and add 1/4 mushroom. Cook until golden brown, season to taste then set aside.
In another pot, melt remaining butter and add the rest of the mushrooms, the onion and garlic. Cook until onions are clear.
Add flour and seasoning to the mushroom mixture, stir to combine. Stir constantly, add wine slowly allow to evaporate then add stock. Keep stirring so it does not have flour lumps.
Bring to a boil and cook for 20-30 minutes. Stir occasionally. Let the soup cook faster remove from stove top. Use a blender or food processor. Your can also use a immersion blender do not blend totally. In my family, we prefer the soup with little bits of mushrooms.
If you are using the blender, transfer the soup to a pot. Add cream, season to taste and mix, simmer.
Toast some bread add butter and oregano or season of your choice, cut into cubes. If you have rustic home-made bread, it is even tastier. As my Spanish mother-in-law would say, completa con el pan Gallego (complete with the Galician Bread.)
Sopa de Champiñones sin Gluten y Sabrosa
1 libra de champiñones en rodajas (variedad o depende de su gusto)
3 cucharadas de mantequilla
1 cebolla pequeña en cubos
2 ajo picado
1 cucharadita de hojas de tomillo o frescas si es posible
1 taza de caldo de verduras
1/4 taza de vino
1 cucharada de harina
1/2 taza de crema
Método
A fuego medio, derrita 1 cucharadita de mantequilla y agregue 1/4 de champiñón. Cocine hasta que esté dorado,
sazone al gusto y reserva aparte.
En otra olla, derrita la mantequilla restante y agregue el resto de los champiñones, la cebolla y el ajo.
Cocine hasta que las cebollas estén claras.
Agregue la harina y el condimento a la mezcla de champiñones, revuelva para combinar. Revuelva constantemente, agregue el vino lentamente, permita que se evapore y luego agregue el caldo. Siga revolviendo para que no tenga grumos de harina.
Llevar a ebullición y cocinar por 20-30 minutos. Revuelva de vez en cuando. Deje que la sopa cocine más rápido retire de la estufa.
Use una licuadora o procesador de alimentos. Tu también puedes usar una licuadora de inmersión que no se mezcle totalmente.
En mi familia, preferimos la sopa con pequeños trozos de champiñones.
Si está usando la licuadora, transfiera la sopa a una olla. Agregue la crema, sazone al gusto y mezcle, cocine a fuego lento.
Tueste un poco de pan y agregue la mantequilla y el orégano o la estación de su elección, cortados en cubos. Si tienes pan rústico hecho en casa, es aún más sabroso. Como diría mi suegra española, completa con el pan Gallego.
