I bring you a delicious home-made soup filled with all sorts of healthy benefits. The color tells what it helps in the body. It is ironic as to the colors of the vegetables and fruits. It is weird what the colors are and how they relate to our body. Today I am using beets and it’s color is red. What in our body is red? Well, our blood is red. Isn’t it funny or weird the color of blood and beets has the color red in common? Interesting, isn’t it? Let’s have some Hearty Home Made Beet Soup today!
Well, sometimes life show us ways to enjoy the delicious vegetables in our daily lives. My grandmother used to always tell us about the benefits of the fruits and vegetables but never did I realize that these benefits would mean something in my life to the extent of life and death. I learned that beets enriched our lives in many ways. Little did I know that it would enrich mine more than I could imagined. I found myself in need of blood as I was loosing it more than building it as necessary. I was not taking in enough vitamin c in my diet to rebuild the hemoglobin in the blood.
Based on the fact that I needed to build my blood rapidly besides the intake of blood from the blood bank, I needed to seek natural resources by including more vegetables and fruits in my daily menu. I had previously mentioned that Beets is rich in iron, fiber, folate , vitamin c and potassium. It is good to know that beets is also loaded with disease fighting phytonutrients and also helps to detoxify and helps the body to revitalize and work better which means you are not tired and sleepy most of the time but energized and ready to go.
Hearty Home Made Beet Soup
1 tsp olive oil
1 small onion minced
2 cloves garlic minced
4 medium beets, big cubes
a pinch of cinnamon
a pinch of tumeric
a pinch of cumin
a pinch of cayenne pepper
2 cups vegetable broth
Method
In a pot, add oil. Saute onions, garlic, ginger until clear.
Add seasons: cinnamon, tumeric, cumin, cayenne.
Wash beets and add to pot, add vegetable broth, boil and simmer for 15 minutes.
Put in food processor adding all seasoning, onions, garlic, and ginger, puree on high.
Transfer soup to a pot, simmer for 5 minutes. Taste to season. Serve with extra cream.
Sopa Casera de Remolacha
1 cucharadita de aciete de oliva
1 cebolla pequeña picada
2 dientes de ajo picados
4 remolachas medianas, cubos medianos
una pizca de canela
una pizca de curcuma
una pizca de comino
una pizca de pimienta de cayena
2 tazas de caldo de verduras
Método
En una olla, agrerue aciete, saltee las cebollas, el ajo, el jengibre hasta que estén claras.
Agregue estaciones: canela, cucuma, comino, pimienta.
Lava las remolachas y agregue a la olla, agregue caldo de verduras, hierva y cocine a fuego lento durante 15 minutos.
Ponga en el procesador de alimentos agregando todo condimentos, cebollas, ajo y jengibre, puré en alto.
Transfiera la sopa a una olla, cocine a fuego lento durante 5 minutos. Saborea a su gusto. Sirve con crema extra.
