Pressure Cooker Cheesy Broccoli Soup
Hi All,
School is out and you can feel the excitement in the air. We are looking forward to our numerous ideas and plans as we begin the holidays. There are so many things to do, places to go and family and friends to meet. This summer will be a time to make more momentos inolvidables (unforgettable memories.) As much as we are excited about all the adventures, we are thinking of all the tasty abuelita’s recipe. We are modifying one of our favorite making Delicious and Easy Pressure Cooker Cheesy Broccoli Soup to begin this fabulous vacation.
Yes, we are enjoying our abuelita’s recipe as we need to eat healthy before we reach for the rich Mexican and Spanish food we will enjoy later this summer. We are happy to share this recipe with you all as it is quick and easy to share with the family. Did you know that a hot bowl of soup cools the body on a hot summer day? Ha, bet you did not :)!
Easy Home Made Cheesy Broccoli Soup

Easy Home Made Cheesy Broccoli Soup
- 6 cups broccoli cut up
- 2 cloves garlic minced
- 4 cups vegetable soup or bone both
- 1 cup cream or evaporated milk
- 4 cups sharp Cheddar cheese shredded
- 1 tin peas and carrots or
- 1 large carrots cube
- 1 can green peas
- 1 teaspoon corn starch
- You can prepare vegetables ahead of time which will help immensely. Use a large pot or use the pressure cooker and prepare enough as most of my family ask for seconds.

Saute garlic in pressure cooker, then add vegetable broth, heavy cream or milk, broccoli and carrots.

Put on the lid and set vent to seal. Select button and add the time of 8 -10 minutes, vegetables will be tender.

Let naturally release, vegetables will be tender. Release valve.

Separate a large cup of vegetables to add substance to the soup after blending or puree remaining veggies. Return puree to the pot .

Next, add the grated sharp cheddar cheese gradually, stirring constantly until cheese is melted. Add cheese, simmer and stir until it melts fully, then add remaining cheese until all the cheese is used up. On low heat, simmer. Disconnect heat immediately once all the cheese melts.

Add extra cheese on top of portion for creamier flavor soup which all enjoy!

6 tazas de brócoli cortado
2 dientes de ajo picados
4 tazas de sopa de verduras o hueso
1 taza de crema o leche evaporada
4 tazas de queso cheddar afilado rallado
1 vaso de guisantes y zanahorias o
1 taza de zanahorias picado
1 lata de guisantes verdes
1 cucharadita de almidón de maíz
Método
Puedes preparar vegetales más temprano y te ayudará inmensamente. Use una olla grande o use la olla de presión y prepárense lo suficiente ya que la mayoría de mi familia pide más.
Saltee el ajo en la olla a presión, luego agregue el caldo de verduras, crema o leche espesa, brócoli y zanahorias. Cocine por 10 minutos, las verduras estarán tiernas. Deje que el aire sale
Separe una taza grande de verduras para agregar mas tarde como sustancia a la sopa y mezcle o haga un puré. Regresa el puré a la olla.
A continuación, agregue el queso cheddar afilado rallado gradualmente, revolviendo constantemente hasta que el queso se derrita. Agregue el queso, cocine a fuego lento y revuelva hasta que se derrita por completo, luego el queso restante hasta que el queso se haya agotado. El fuego lento, cocine a fuego lento.
